Thankful
I like the quote that says - "You don't know what you've got til its gone"
Every time I get sick, (like yesterday) I realize how much I am thankful to be healthy.
Although I am not totally better today...I will be all the more thankful when I am completely well.

Nutmeg Blueberry Muffins
Not a very good pic, but they tasted good. Ok, last recipe for awhile. I have been trying not to eat what I make, but its so hard.
1/2 cup butter, softened
1 cup sugar (1 tablespoon sugar to be sprinkled over top, later)
2 eggs
1/2 cup milk
1 tsp. vanilla extract
2 cups all purposed flour
2 tsp. baking powder
1/4 tsp salt
2 cups fresh or frozen blueberries (don't defrost if frozen)
1/4 tsp ground nutmeg
Cream butter and 1 cup sugar until light and fluffy.
Add eggs one at a time, beat well after each addition.
Stir in milk and vanilla.
Combine flour, baking powder and salt. Add to creamed mixture just until moist.
Fold in blueberries.
Fill muffin cups and sprinkle sugar & nutmeg mixture.
Bake at 375 for 25-30 min. or until toothpick comes out clean. Yeild: 3 dozen

Here are a few more recipes I found that I liked.
1 sheet refrigerated pie pastry
1/4 cup sliced green onions
1 tablespoon butter
6 eggs
1 1/2 cups heavy cream
1/4 cup apple juice
1/2 lb bacon cooked and crumbled
1/8 tsp. salt
1/8 tsp pepper
2 cups shredded cheese (any kind)
Line pie plate with pastry, flute edges.
In a smal pan saute green onions in butter until tender.
In a large bowl wisk eggs, cream and juice.
Stir in bacon, salt, pepper and green onions.
Pout into pastry, sprinkle with cheese.
Bake at 350 for 40-45 min. or until knife comes out clean. (it may still be a little jiggly in center)

I am trying out a few new recipes. This one was quick and tasty.

2 tablespoons minced frest basil
2 tsp. dill weed
1/2 tsp. salt
1/2 tsp. pepper
7 small yellow squash, cut into slices
1 lb. yukon gold potatoes, cut into cubes
5 small carrots, cut into slices
Combine first five ingredients. Add vegetables and toss.
Place in heavy duty foil, seal tightly. Grill, covered, over medium heat for 20-25 min or until potatoes are tender.
